Greek Traditional Salad


2 large tomatoes, chopped

1 head romaine lettuce- rinsed, dried and chopped

1 red onion, thinly sliced

1 (6 ounce) can pitted black olives

1 green bell pepper, chopped

1 red bell pepper, chopped

1 cucumber, sliced

1 cup crumbled feta cheese

6 tablespoons olive oil

1 teaspoon dried oregano

1 lemon, juiced

ground black pepper to taste


In a large salad bowl, combine the Romaine, onion, olives, bell peppers, tomatoes, cucumber and cheese.

Whisk together the olive oil, oregano, lemon juice and black pepper. Pour dressing over salad, toss and serve.

A delicius and low calorie salad is ready... 

Mediterranean Salad

Ingredients for 2 people

150 gr. soaked bulgur
20 to 30 gr. fresh onion
1 onion
1 green pepper
1 red pepper
1 yellow pepper
1 fresh tomato frames
1 cucumber pickle
little capers
1 dried apricot
1 dried plum
1/2 bunch chopped rocket leaves
½ bunch parsley, chopped
30 gr. olive oil
30 gr. fresh lemon juice
1 slice of cream cheese on the grill
Salt and pepper


Wet and gently cook the bulgur, strain and keep aside. Finely chop all ingredientsand make a lemon sauce. Place the cream cheese, cut into slices on the grill for a minute.

Place the bulgur in a bowl and add all ingredients, leaving little of everything fordecor. Drizzle with lemon sauce, which, if we wish, we can add some sugar. Mixwell.

In a dish we make a pyramid with the salad and decorate around it with a bit of all materials. Add a little lemon on top and place a slice of cheese, cream cheese.

Rocket Salad


In a small glass of whiskey (very handy) add two tablespoons of oil, and slightly less than 1 tablespoon balsamic vinegar! Then put half a teaspoon of mustard and finally spoon on his nose, little honey! Kakomoirides my kolouthiste precisely this analogy! Then stir fierce! But too! For this one needs, neither too tight nor too tall or too short glass! The sauce is ready!
Try it in salads, cooked over sweet cheese (mastelo Hugh, Halloumi Cyprus) with a little sesame.


Wash the arugula, drain it and cut it into small pieces (to facilitate the mixing then) unless it is washed and packed! The rocket should not be old, because the leaves become tough and bitter aggravating! Also avoid the rocket that is poorly developed and consists mainly of twigs and leaves, not because they have no substance! Wash and cut into 4, 3 tomatoes and put them together with the arugula in a bowl. Add a little Parmesan cheese, cut into very thin slices (divine material), or in any case a salty cheese and will not even need salt! Do not pour the sauce over it only when it's time to eat, because the sauce to alter, if left too long on it! Stir, too furious!

Bean salad with Feta and Mint

Materials for the dressing:
2 tablespoons white balsamic vinegar or white vinegar
4 tablespoons extra virgin olive oil
1/3 teaspoon freshly ground black pepper
1/2 teaspoon salt
2 teaspoons fresh lemon juice

Materials for the Salad:
1.5 cups of dry beans
1/4 cup chopped fresh mint leaves
1 medium red onion, sliced
1/2 cup feta cheese, crumbled

Rinse well to the dry beans. Cover with water and allow to swell during the whole night.
Drain beans and place in saucepan. Add fresh water to cover. Cook over medium heat until beans are tender and is cooked thoroughly (1-2 hours). Once cooked drain the beans, place in large bowl and allow to cool.

To prepare the dressing, whisk together white balsamic vinegar, olive oil, black pepper, lemon juice and salt in a bowl.

Mix the beans with the dressing on the salad bowl. Add the fresh mint, onion and cheese and stir.
Before serving put the salad in the refrigerator for at least 20 minutes.
