Sauce vinegar&olive oil

In a small glass of whiskey (very handy) add two tablespoons of your extra virgin olive oil, and slightly less than 1 tablespoon balsamic vinegar! Then put half a teaspoon of mustard and finally spoon on his nose, little honey! Follow precisely this analogy! Then stir fierce by hand or a mixer. For this one needs, neither too tight nor too tall or too short glass! 

The sauce is ready!

Try it in salads, 
over grilled sweet cheese (e.g. mastelo from Chios, Halloumi of Cyprus etc) with a little sesame.

Lemon sauce

The classic Greek dressing on grilled fish and salads.
In a small glass of whiskey (very handy) add two tablespoons extra virgin olive oil, juice of one lemon, salt, oregano and stir with a fork until smooth. Add a little brown sugar depending on the application.





1 small cucumber 
300 ml (1 1/4 cup) yoghurt
3 cloves garlic, crushed
30 ml (2 tbsp) chopped fresh mint
30 ml (2 tbsp) chopped fresh dill or parsley
salt and freshly ground black pepper
mint and dill or parsley for garnish
olive oil, olives and pita bread for serving



Finely chop the cucumber and place in a strainer with plenty of salt.


Let stand for 30 minutes.
Rinse the cucumber under running water and allow to drain well.
Wipe with paper towels.
Mix yogurt, garlic and herbs and salt and pepper.
Add the cucumber and stir.

Then garnish with the herbs, pour some olive oil and serve with olives and pita or grilled bread.
