Fish baked with tomato sauce and olive oil

Wash, add salt and cook 4-5 slices of fish - preferably red snapper or grouper - then barbecue or grill.

In a bowl, mix two medium chopped ripe tomatoes, one cup of extra virgin olive oil, one tablespoon chopped parsley, the juice of half a lemon, salt and pepper.

Serve the fish hot, and pour over it the tomato sauce and olive oil.
